THE RIBS: Purchase any amount of pork spare ribs. (At Woudstra’s, of course!)
THE RUB: This is enough for 6 – 7 racks of ribs. Store any leftovers in an airtight container for future use.
2 T. paprika
2 t. garlic powder
1 t. sage
1 t. onion powder
1 t. coarse black pepper
½ t. cayenne pepper (or more if you like things spicy)
1 t. celery salt
1 t. salt
2 t. lemon pepper
1T. dark brown sugar
Mix the rub ingredients together in a bowl. Rub the ribs with olive oil and then rub them all over with the spice rub. Preheat your oven to 325. Put the ribs in a baking dish and cover loosely with foil. Bake for 2 hours, then remove the foil and bake for 30 minutes more OR finish on a preheated grill for over low heat for 15 – 30 minutes. I prefer to finish them on the grill to get that great grilled flavor. While grilling you may wish to baste the ribs with apple juice. These ribs have lots of flavor, but for those who love their sauce, serve your favorite barbecue sauce ON THE SIDE.
