1 T. butter or margarine 1 onion, diced 4 potatoes, peeled and sliced
2 apples, peeled and thickly sliced 1 14 oz can sauerkraut 1 cup apple juice salt and pepper to taste
In
a large skillet or Dutch oven, melt the butter or margarine and lightly
brown the onion. Olva said she used her electric skillet and so did I.
Next add the peeled sliced potatoes. Salt and pepper this layer and cook
for about 5 minutes. Next, slice the metwurst in ˝ to 1-inch chunks and
add to the skillet. Olva’s recipe called for 1 ring, but we are meat
eaters so I used two. Add the peeled sliced apples next and cover the
entire skillet with the sauerkraut, juice and all. Next, pour over the
apple juice and give it a final sprinkle of salt and pepper. Cover and
simmer for 20 – 35 minutes or until the potatoes are tender. You can add
more apple juice if the mixture gets too dry. I served it with rolls and
