2 lbs.Woudstra Seasoned Pork Sausage
1 red or yellow bell pepper, cut in 1” cubes
1 large onion, chopped
2 small zucchini or 1 small zucchini and 1 small yellow squash, sliced
12 eggs lightly beaten
1 cup sour cream
8 oz. mushrooms, sliced
1 lb. chunk of American or Cheddar Cheese, available at Woudstra’s, shredded
Preheat your oven to 350 degrees. In a large fry pan, cook the sausage and onion until browned. Drain and cool slightly. In a large bowl, mix the slightly beaten eggs, sour cream, pepper, zucchini, mushrooms and cheese. Then add the sausage mixture and stir to blend. Bake for 45 – 60 minutes in a greased 9x13 pan or baking dish until the center is set and the top begins to brown. Let sit for a few minutes and serve. This delicious breakfast dish has no bread so it is low in carbs and high in vitamins with all the fresh vegetables. Don’t like mushrooms, zucchini, or peppers? Just increase one of the other vegetables to take is place. This can be made the night before and refrigerated, but you will need to increase the cooking time.
