3 lbs. Ham loaf – from Woudstra’s Meat Market, of course
2 eggs – slightly beaten
1 1/3 c. graham cracker crumbs
1 c. milk
1 t. salt
½ t. pepper
Mix all the ingredients together. You can use a large spoon, but clean hands work the best! Shape into balls. I like to make them between 1/3 and 1/2 cup in size. This will fill a 9 x 13 size baking dish. Then mix together in another bowl..
1 can tomato soup
½ c. vinegar
1 ¼ c. brown sugar
1 heaping teaspoon dry mustard
Pour this sauce over the meatballs and bake at 350 for 1¼ hours or until the tops begin to brown a little. Remove from the pan and place on a meat platter to serve. I like mine plain, but Norm likes to put the sauce in a gravy boat to serve over the meatballs.
